私たちの養殖の舞台 塩田跡の養殖池で育てた牡蠣を「塩田熟成牡蠣・クレールオイスター」と名付けました。(フランスでは、塩田跡のことをクレールとも呼ばれています。)

It was selected as "Hiroshima Premium Top Oyster," a rare high-quality oyster that accounts for about 0.3% of the total production in Hiroshima Prefecture.

Claire Stripe Oyster

特徴的な綺麗な縦縞が目印のファームスズキのサラブレッドオイスターです。塩田跡の養殖池の水質と特有のプランクトンは、牡蠣を驚くような味わいへ創りだします。未産卵の小ぶりな牡蠣は、その一口で贅沢な甘みが口いっぱいに広がり、心が震えるほどの美味さがあります。

Farm Suzuki's thoroughbred oysters are distinguished by their distinctive, beautiful vertical stripes.
The water quality of the former salt farm ponds and the plankton characteristic of the oysters create an astonishing flavor. The small, unspawned oysters have a luxurious sweetness that fills the mouth and makes one's heart tremble.

Claire Oyster

養殖池の水温が高くなってしまう夏は海で身を太らせ、水温の落ち着いく秋に養殖池で熟成させる、海と養殖池が創り上げる牡蠣です。塩田跡の養殖池特有の水質とプランクトンは、牡蠣を驚くような味わいへ仕上げてくれます。芳醇でマイルドな味わいのクレールオイスターをお愉しみください。

The oysters are fattened up in the sea during the summer when the water temperature in the ponds is high, and matured in the ponds in the fall when the water temperature drops.
The water quality and plankton unique to the former salt farm ponds give the oysters an amazing flavor. Please enjoy the mellow and mild taste of Claire Oysters.

Shrimp

養殖家たちの愛情を一心に受け、薬品等一切使用することなく健康的に育った車海老は、しっかりとした肉質、ぷりっぷりの食感、強い甘みとしっかり詰まったミソが特徴、頭から尾までまるごとお召し上がりいただけます。数量はたくさん作れませんが、健康でおいしい車海老は多くの方々に喜ばれています。

The prawns are grown healthily and without the use of any chemicals, and are served whole from head to tail. Although we cannot produce a large quantity, our healthy and tasty prawns are much appreciated by many people.

種苗

ハッチェリー(種苗生産施設)で育てた広島県原生種の縞牡蠣(ストライプオイスター)の5mm〜1cm稚貝を販売しています。このサイズの種苗からですと歩留りも良く育ちます。

We are selling 5mm to 1cm young of Hiroshima Prefecture's native striped oyster (striped oyster) grown at Hatchery (seedling production facility). This size of oyster seedlings will give you a good yield.

What is the best-before date?

The shelf life of frozen products is one year from the date of manufacture.

How should I defrost the product?

①Defrost just before eating.Defrosting at room temperature over a long period of time is not recommended, as this will cause drips to form and spoil the flavor!
Defrost just before eating. Remove the pack from the freezer and place it on a bat without opening the seal.

② lukewarm running water for 3-5 minutes.Apply lukewarm water of around 30°C for 3 to 5 minutes, and keep the water running so that the lukewarm water constantly overflows. While it is preferable to defrost under running water at a constant temperature, it is also OK to soak the fish in a bat of 40°C water for 6 to 8 minutes.

③When thawed, cool quickly.Press lightly with your finger on the top of the pack, and if the material seems to be dented, it is OK to take it out. Then, prepare a bat of ice water. Soak the fish in the pack quickly to cool it down, and it will be much easier to eat.

④Open the packet and place on a plate.Open the packet and drain off the water before placing on a plate. When rinsing with water, rinse the packet off quickly to prevent the flavors from becoming blurred. After thawing, serve as soon as possible, as the flavor will be lost if left for a long period of time due to dripping.
